Tric-color tomatoes, arugula, quinoa and fresh corn! (Key word: FRESH CORN)
I drizzled some EVOO and balsamic vinegar, salt and pepper. That's it. Keeping it as simple as possible.
Serve! Oh, some shaved parmesan is a must too!
