Arugula Peach Salad

http://tchype.blogspot.com/2015/02/arugula-peach-salad.html

I can't help making my everyday meal with peaches. Texas peaches are sooo sweet, juicy and smells just fabulous. Of course, peaches aren't available all year around, so I'm enjoying it as much as I can.

White Wine Mushroom Pesto Salad

Came back tonight from the hell, aka "Pilates", whew,  one piece! I couldn't feel my body at all so I called out for pesto to calm myself down.

Mediterranean Pasta Salad

Bulgarian sheep's milk feta + Greek Kalamata olives = Pure sublime.

Can you push "simplicity" over its limitation? Oh, YES I CAN, baby. The most simple dish I made this afternoon almost took my breath away. Just imagine how delicious and fabulous it is.... "Simple can be harder than complex", right back at you, Steve Jobs.

Roasted Balsamic Eggplant & Sweet Potato Quinoa Salad

Introducing one of my must-haves in the pantry - "Quinoa", the hipster's hippie food, this health building grain was once called "the gold of the Incas."

Couscous Cranberry Salad

I needed to make something quick and light right before my yoga class, which by the way has become one of the best experiences I have had in years. There was some asparagus in the fridge and dried cranberries that I stored for making muffins. Fantastic! They are the perfect match for light and fluffy couscous. Exactly what I was looking for.

Tuscan Tomato & Homemade Crouton Salad

Unlike me, my husband is a major tomato fan, there's just something about tomatoes, I have a hard time liking them. However, I knew saying no to $0.77 a box ripe cherry tomatoes, would not be very wise. We had half of a baguette that had been sitting on the counter for two days, and we do not waste food, I'm not sharing the baguette with the birds either. The fastest way to get rid of it is to make a quick batch of homemade croutons.

It's is so easy and delish you will absolutely fall in love with it; and probably won't be buying packaged croutons anymore. Promise.
