Dinner tonight: Quinoa and black bean casserole.
Ingredients: Quinoa, black beans, tomato, onion, garlic, Chili spice, cilantro, cheese, avocado

Sautee onion, garlic and fresh tomatoes

Then add black beans and chili spices

Quinoa I made a head of time

Incorporate all together and add jalapenos

Dress with avocado and cilantro
Sprinkle some cheese on top and send it in 350F oven for 10 minutes until the cheese melts

I have to say I'm proud of myself by just working with what I have in hand and it turned out un-mazing! Thumbs up!
